The main building of Le Occare farmhouse is encircled by a wooden area about 3 Ha wide, implanted in two different occasions, and that is now 10 and 14 year-old. The trees were chosen between these species: oak , bay oak, hazel, pine, hornbeam, willow, white poplar , privet, cornel, elder, hawthorn and eglantine. We realized three different implants of mycorrhized trees with the following truffle species: Tuber Melanosporum (black truffle), Tuber Magnatum Pico (white truffle) and Tuber Borchii Vittadini (Albidum white truffle). in this area there was a natural production of white truffles in the past, before deforestation caused a great reduction of truffles reproduction. The new wooden area not only has an interesting impact on landscape and local echosystem, but it's also the breading place of a lot of wild birds. Now Tuber Borchii Vittadini begins to grow and we hope that in the future we will find Tuber Magnatum Pico (until now only a few exemplars found) and Tuber melanosporum.
The truffles match very well with the recipes of the restaurant.
